Dion’s to expand Colorado footprint with third Denver location

Dion’s — a New Mexico-based restaurant brand known for its pizza, salads, subs and ranch — has a new location in the works for a Colorado neighborhood dubbed Green Valley Ranch.

The company announced this week that it had broken ground on the new Denver location in late April. The restaurant is slated to open in the fall, according to a news release.

“We’re excited to continue our growth in Colorado and become part of another Denver-area community,” said Dion’s CEO Mark Herman in a statement.

The location will create roughly 75 full- and part-time jobs. The restaurant will emphasize giving first-time job opportunities to local youth, continuing the chain’s engagement with youth development efforts. Those efforts also include partnerships with local schools and nonprofits.

The restaurant’s design will also feature its classic elevated platform, offering young customers and kids on Dion’s-hosted education tours views of the pizza-making process inside the planned open kitchen. The 4,750-square-foot restaurant will also feature a drive-thru and a dining room that can seat 176 people.

The venture expands the pizza brand’s footprint to three locations in the Denver area, and four in Colorado overall — it also has a restaurant in Colorado Springs. The Colorado expansion follows recent growth of the brand in Texas, with Dion’s breaking ground on its second El Paso location in May 2025. That location will also open this fall, a spokesperson said.

What spurred the Colorado expansion is what the company says is “rapid growth” in the Green Valley Ranch area, with new housing developments and major retail and amenity projects underway. The neighborhood’s concentration of young families was also a draw, the company said.

“It’s a vibrant, growing area, and this location allows us to serve residents with a comfortable place to gather and enjoy great food while creating an inspiring place for our employees to build fulfilling careers,” Herman said.

The majority of the brand’s locations are in New Mexico, which is home to 23 Dion’s restaurants.
