Brew Lab opens Brew Dock at Marina Del Sur in Elephant Butte Lake State Park

Brew Lab 101 recently dipped its toes into the water for a new venture.

On the weekend of June 19, Brew Dock officially launched at Marina Del Sur in Elephant Butte Lake State Park. The marina, located on the north end of the lake, was completely renovated ahead of the opening. Brew Dock is currently operating through weekend celebration permits, but Brew Lab owner/CEO Scott Salvas expects to receive a full liquor license in the coming weeks. For now, the space is open Fridays through Sundays. That could expand to include Wednesdays and Thursdays in the future.

鈥淲e expect it will run seasonal, so next year it鈥檚 expected to run probably from at least April through some point in October as long as there鈥檚 demand there,鈥 Salvas said. 鈥淩ight now there鈥檚 just seating on the actual Brew Dock, which is all covered, but another phase will remodel the inside building a little bit more so we can accommodate some level of inside seating.鈥

It was a relatively quick timeline to get everything in order, which included not only the aforementioned permits but approval from New Mexico State Parks and the Bureau of Reclamation at the federal level. Prior to the opening of the Brew Dock, visitors to Elephant Butte could only have alcohol if they brought it themselves.

鈥淚 had gone down to the marina for many, many years, especially before I got the brewery going 鈥 when I had a little more time on the weekend,鈥 Salvas said. 鈥淲e never had anything like that down there. It鈥檚 the only drinking establishment on Elephant Butte Lake, and it鈥檚 the first brewery in New Mexico history as far as I鈥檓 aware to ever be in a state park. So that鈥檚 pretty exciting.鈥

Brew Dock currently serves approximately five of the brewery鈥檚 beers. Salvas says that will expand to about 10 in the near future. Canned cocktails are also served at the establishment. Brew Lab鈥檚 home base for producing beer and cider is its original location in Rio Rancho, and a delivery van transports the product to Elephant Butte.

鈥淥bviously Brew Dock is still such a new animal. We鈥檙e gonna figure out what the burn rate is gonna be and how much beer we need to to get down there,鈥 Salvas said. 鈥淏ut we鈥檙e gonna make sure that we can keep up with it. It鈥檚 a little ways away, but it鈥檚 still only two-and-a-half hour drive.鈥

Early returns were overwhelmingly positive during the grand opening, and the hope is that it will help to boost attendance at Elephant Butte in the months and years to come.

鈥淭he vibe was awesome. It was exactly what we had envisioned,鈥 Salvas said. 鈥淲e had a band on (that) Saturday and the place was packed 鈥 The biggest sentiment was, 鈥榃e鈥檝e needed this for years. Thank you for doing this.鈥欌

It鈥檚 just the latest endeavor in what has been a busy year for Salvas and the Brew Lab brand. After originally opening in Rio Rancho in 2019, the brewery expanded to Albuquerque in 2023. That growth has continued this year with a variety of partnerships. The highly anticipated Putts N Pints 鈥 located at the former Putt Putt Golf and Games on San Mateo 鈥 is targeting a late July opening once it receives liquor license approval. The renovated space will include a full bar menu complete with Brew Lab beer. Additionally, Brew Lab is opening a tap room at the McDermott Athletic Center in Rio Rancho. That will begin with some celebration permits this summer before the official launch, which is expected for September.

鈥淭his year has honestly surprised me in terms of the growth,鈥 Salvas said. 鈥淪ince folks have reached out to want to partner with us, it鈥檚 been pretty awesome. We feel very thankful that the community wants to continue to work with us and support Brew Lab, because obviously you can鈥檛 be successful in this business without community support.鈥
